? Raw Basil Pesto Lasagna layered thick with garlic sunflower seed cheese and sun-dried tomatoes! Ariane Labelle and Lani Weis whipped up this stunning and equally delicious creation for lunch yesterday in the EpicSelf HQ kitchen.

Over the last two weeks I’ve been teaching them my raw chef top tips and techniques for making a variety of their favorite meals as apart of there one month fellowship program. I can’t believe it’s already been two weeks!

If you adore lasagna this recipe is for you! It’s guilt free, deeply satisfying, nutritious, fast and easy to make for the entire family.

Here’s the recipe!

Serves 4-5 large portions.

Cheesy Nut Layer

2 cups of sunflower seeds, soaked 4 hours or more
1 cup of sesame seeds
2 tablespoons lemon juice
1 red pepper
2 tablespoons fresh parsley
1/2 teaspoon salt (optional)
1/2 cup water as needed
– Process all ingredients in blender (with as little of the water as possible), until a thick type paste is achieved.

Zucchini Layer

2-3 large zucchinis, cut into long thin strips
– Soak strips in olive oil and lemon juice for 10-20 mins.

Tomato Sauce

1 1/2 cups sun-dried tomatoes, soaked
2 cups tomato, chopped
– Process in blender until smooth.

Basil Pesto

2 cups tightly packed basil leaves
3/4 cups of sunflower seeds
3 tablespoons olive oil
1/2 teaspoon salt
1 clove garlic
1 tablespoon lemon juice
– Process in blender until you have a thick paste.

Bok Choy Layer

4-5 leaves of Bok Choy
1 teaspoon olive oil
– Soak leaves in olive oil for 10 mins.

Fresh Tomato Layer

2 medium sized tomatoes, sliced

How to make the final masterpiece!

1) Line the base of your dish with a layer of zucchini, slightly overlapping each slice.
2) On top of this, put down a thick layer of cheesy nut paste, then add the layer of sliced tomatoes.
3) Add the layer of bok choy leaves and top these with a thick layer of basil pesto paste.
4) Finish this off with another layer of zucchini slices and one boy choy leaf on the top.
5) Place dish in the fridge for 1-2 hours to firm up.
6) Garnish with tomato sauce and basil leaves. May add pepper for taste.
