Sushi is a staple dish for so many. While transitioning from a normal American diet to a plant based raw vegan diet, I craved something hearty. This vegan sushi lunch did not disappoint. It was filling, flavorful, and best of all easy! I made it in less than 20 minutes including prep time!
Preparation:
- 1-2 Packages Sushi Nori Rolls (Roasted or Raw)
- Avocados
- Cucumbers
- Red Cabbage
- 2 Cups Heart of Palm
- 1 Bunch of Cilantro
- 1 Cup Sesame Seeds
- 1 Cup Sunflower Seeds
- 1 Tbsp Coconut Vinegar
- 1 Ginger Clove
For Rice:
- 1.5 Cups Heart of Palm
- 1 Tbsp Coconut Vinegar
- 1/2 Cup Sesame Seeds
Add above ingredients to food processor. Pulse for 1-2 minutes until Heart of Palm in small pieces resembling rice.
For Sesame Ginger Cream Cheese:
- 1 Cup Sunflower Seeds
- 1 Clove Ginger
- 1/2 Cup Sesame Seeds
- 1 Bunch of Cilantro
Add above ingredients to Vitamix. Graduate blending speed until sauce reaches a paste consistency.
For Sushi:
- Avocados Halved and Sliced
- Cucumbers Sliced into Long Strips (We used zucchini as a substitute)
- Red Cabbage Chopped
- Sushi Nori Rolls
- Lay Sushi Nori Roll flat
- Spread thin layer of Sesame Ginger Cream Cheese over 1/4 Roll
- Add layer of rice on top of cream cheese.
- Layer in Cucumber, Avocado, and Red Cabbage
- Roll Sushi tightly, using wet fingers to wet the final edge before closing roll.
- Dip tip of sharp knife in water and cut roll into Sushi pieces
- Enjoy!
