Today was our first day preparing raw vegan food and recreating different flavors that we are craving.
The raw vegan world is still new to me and I’m excited to explore it over the next month here at Epicself.
Before coming here, the term raw food to me meant just fruit and salads. It is interesting to me that there are so many options for preparing raw food, and it is fun to put stuff into a blender and mix something healthy and nutritious up. I was surprised to find all kinds of raw pasta recipes. I love food and I’m a big pasta fan, so that was great news. I was craving something hearty and delicious. The recipe of my choice was a raw Zucchini pasta with Alfredo Sauce.
This dish is really easy to make, and you can play around with the flavor of your sauce. All you need is a spiralizer, a blender and 10 minutes of your time to make this yummy dish.

For the pasta:
1 large Zucchini, spiralized
1 large tomato, diced
For hearty Alfredo Sauce:
3 cups of sunflower seeds
2 cups of basil
2 spoons of olive oil
2 spoons of balsamic vinegar
2 cloves of garlic
juice of one lime
Put all the sauce ingredients into a blender, whip it up and add some spices for the taste. We used Cayenne pepper, pink Himalayan salt, cumin and paprika. Pour the sauce on top of the zucchini pasta, mix and serve. You could even sprinkle some nutritious yeast on top for a more decadent experience.
