After a long day on the water and a kick-ass workout on the paddle board we all were tired, hungry, and sore! This recipe was perfect as it takes about 5 minutes to whip up some spirulina hummus and create a superfood bowl with almost any leftover veggies in your fridge!
 
We added protein-packed superfoods such as quinoa and spirulina for recovery after our big workout. The beauty of this recipe is that you can add almost any veggie to scoop out the left over hummus! We added cucumber, cauliflower, and avocado for a green superfood bowl and topped with the sun-dried tomatoes we dehydrated here in the Epic Self kitchen.
 
Spirulina Hummus
 
Ingredients:

1/2 cup sesame seed 

1 large green zucchini, 6 inches or bigger

1/4 cup of spirulina crunchies or spirulina powder

2 cloves of garlic

 1/4cup apple cider vinegar 

Juice of 1 lime

Handful of cilantro 

 
Directions:

1. Add all ingredients to a high speed blender and blend on high. It will turn a beautiful dark green!
2. Layer the quinoa on the bottom of the bowl and place a dab of hummus on top and extra on the side to dip with different veggies.
 
My favourite thing to do is mix it all together.
