On a lazy Sunday morning, there’s nothing like an epic stack of pancakes to really make your weekend feel complete. We’ve taken this much-loved comfort food and made it raw vegan, then infused it with powerful superfoods and the energy of living plants, to create a meal to nourish your body and soul anytime. The fresh strawberries and tropical coconut pair perfectly with the decadent pancakes and creamy frosting – and your body will thank you for the supercharge of maca, lacuna, chagma and ashwaganda!

 

INGREDIENTS:

 

Pancakes:

 

~ 1 cup psyllium husk

~ ¼ ground flax seeds

~ 5 ripe bananas

~ ½ cup shredded coconut

~ 1 cup water

~ 1 tbsp maca

~ 1/2 tbsp lacuna

~ 1 packet sigma foods chagma

~ 1 tbsp ashwaganda

 

Frosting:

 

1 cup coconut meat

2 tbsp yacon syrup

 

1 cup strawberries, sliced

 

INSTRUCTIONS:

 

Process all pancake ingredients in a food processor. Once blended, you should have a dough-like consistency. Form dough into pancake shapes and place on food dehydrator trays. Allow these to dehydrate for 4 hours on one side, then flip and dehydrate 4 hours on the other side.

 

While you’re dehydrating your pancakes, it’s time to make the super simple frosting! Throw your coconut meat and yacon syrup in the food processor, and blend until nice and creamy.

 

Once pancakes are dehydrated, you can assemble the pancake stacks. Layer pancakes with sliced strawberries, until you have about 3 layers of each – then top with a generous amount of frosting. Dig in and enjoy for a superfood-boosted meal or snack at any time of day!
