These Raw Curried Carrot Burgers are the perfect dish to bring to your next potluck or dinner party. They are so easy to throw together, not to mention a hundred times healthier (and tastier!) than the traditional meat variety. Instead of artery-clogging saturated fats, these babies are packed with vitamins from living plants like carrots, zucchini and red bell peppers. They’re flavored with curry and kicked up a bit with a touch of cayenne. Paired with a smooth aoli and sundried tomato ketchup, these delish patties will be the star of your next dinner party.

INGREDIENTS:

  • 5 carrots 
  • 1 zucchini
  • 4 red bell pepper
  • 3 tbsp  of curry
  • 1/4 tsp cayenne pepper
  • 1/2 cup ground flaxseeds
  • 1/4 cup psyllium husk
  • 1 handful cilantro 
  • Juice of 1 lime

 

Process carrots, zucchini and bell pepper in food processor. Transfer to large bowl, mix the rest of the ingredients in together. Form the mixture into patties and place on dehydrating trays. Dehydrate overnight, then serve in portobello mushroom or eggplant buns!

We wrapped ours in bok choy leaves, made a vegan tomato sauce and served with onion rings! (see notes) Phew, it was good!!

 

Notes:

How to make onion rings- Slice up one whole onion.  Throw away outer skin and place the rings on a dehydrator tray.  Keep onions in dehydrator overnight and then serve with burger the next day.
