We have been having so much fun creating delicious fast and easy meals the last week. A bunch of ingredients needed to be used up and this cucumber tomato salad recipe was created to complement the Spicy Curry Cauliflower Soup. The flavors in this salad balanced the flavors of the soup very nicely and together form a perfectly balanced meal. Great for lunch or dinner.

This salad also provides an abundance of nutrients. Cucumbers are an excellent source of vitamin K and molybdenum. They are also a very good source of the pantothenic acid. They are also a good source of copper,potassium, manganese, vitamin C, phosphorus, magnesium, biotin, and vitamin B1. They also contain the important nail health-promoting mineral silica.

Tomatoes are also an excellent source vitamin C, biotin, molybdenum, and vitamin K. They are also a very good source of copper, potassium, manganese, dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6, folate, niacin, vitamin E, and phosphorus.

Dill is a  a good source of niacin, phosphorus, zinc and copper, and a very good source of vitamin A, vitamin C, riboflavin, vitamin B6, folate, calcium, iron, magnesium, potassium and manganese.

This salad will serve 2 full meal servings or 4 side servings.

Ingredients:

2 cucumbers, chopped
1 large tomato, chopped
1 large handful arugula, chopped
1/2 cup fresh dill, chopped
1 clove garlic, finely chopped
juice of 1 lemon or lime
1 tablespoon apple cider vinegar
1/2 cup olive oil
salt and pepper to taste
2 tablespoons sunflower seeds (optional)

To Make The Salad:

Combine all ingredients in a bowl and toss well.
