Coffee is something that certainly makes most people get out of bed in the morning and start the day with energy. Have you ever tried to mix it up with some of your favorite nuts and delicious cacao nibs? I’m sure I got you hooked now!
I am a sweet tooth and I love to mix cacao and chocolate into pretty much everything. Today we learned about probiotics and how we can easily make our own yogurt out of fresh coconut. It was so much fun making those and I loved it topped with this coffee cacao granola.
Are you ready for this decadent, mouth watering breakfast?
Ingredients for Granola:
2 cups of almonds
1/2 cup of cacao nibs
1/2 cup of honey
2 tablespoons of coffee
Put all the ingredients into a food processor and blend them up. Make sure you don’t over process it, some crunchy texture is really nice. I opted for almonds, but cashews and walnuts also go well. If you like sweeter granola, add some more honey. If you want it stronger, spoil it with coffee! Store the granola in an airtight container until you use it.
Ingredients for coconut yogurt:
Meat from 3 fresh coconuts
Probiotics (buy at pharmacy or health store)
Blend up the coconut meat in a high speed blender. You may be able to blend it all at once if you have a big strong blender. If not, do turns. Add a little water to make sure the blender can do its job. When you have a yogurt like consistency, put your blend coconut in a large bowl. Add the probiotics to it and stir with a spoon. We used high potency liquid capsules, but you can use any of the capsules from the pharmacy and open them up to get the dried bacteria into your yogurt. Let the bacteria ferment your coconut for about 5 hours. Its consistency and flavor will change and you will know when it is ready.
Serve the yogurt in a beautiful glass container, top it with the granola and take it to work. It truly makes your day!
