I said I would never be one of those people who turned meat dishes into raw vegan creations, but then I was introduced to a food dehydrator lol. I was craving something hearty and spicy so I made buffalo style raw vegan cauliflower bites. In high school, I ate Buffalo Chicken sandwiches at least 3x per week for lunch and even went to Buffalo Wild Wings for the Tuesday wing specials! However, as I’ve aged my stomach doesn’t agree with chicken or super spicy sauces anymore so this recipe provided the opportunity to re-experience a part of my youth without the stomachache.

WARNING: THESE BITES ARE DELICIOUS AND WILL GO FAST!

Preparation

  • One Head of Cauliflower

Slice florets off head of cauliflower. You want the florets to be medium sized because they will shrink a bit in the dehydrator.

Buffalo Sauce

  • 1 Lime
  • 3/4 Tomato
  • 2 Tbsp Honey
  • 1/4 Glove Garlic
  • 1 Cup Sesame Seeds
  • Spices: Paprika, Cayenne, Himalayan Pink Salt

Combine lime, tomato, honey, and garlic in VitaMix and blend until a sauce consistency. Add spices to taste; heavier on cayenne for a spicier buffalo sauce. We added sesame seeds to thicken the consistency and add extra flavor.

Cooking Instructions

  1. Combine Buffalo Sauce and sliced Cauliflower florets in large bowl and massage sauce into florets.img_1769
  2.  Place each floret on teflex sheet covering dehydrator tray.img_1776
  3. Dehydrate for 12-15 hours at 188 degrees Fahrenheit.
  4. Enjoy!
